Espresso Chocolate Shortbread Cookies



I have not had the greatest luck with the shortbreads in this book but that doesn't mean I won't keep trying. Simple recipe... filled with espresso and chopped chocolate. I put it in the fridge for about 3 hours and it held it's shape fairly well.


I couldn't poke the fork holes because the chopped chocolate kept getting in the way so I left it alone. They didn't spread!


The espresso flavor is strong... on the bites with chocolate it's a bit too strong for me but I'm not an espresso lover.
